i have been making these for a long time, and it's a recipe courtesy of Dr Gott's No Flour NO Sugar Cookbook. here goes!
1. in a food processor conbine 1/2cup dates, 1/2 cup figs, and 3/4 cup water (he suggests 1/2 cup but i use more). combine until a smooth 'syrup' consistancy
2. in a mixing bowl combine 2 cups oats (i use 'baby oats' from my healthfood store) along with 1/4 cup chopped almonds, 1/4 cup chopped walnuts, 1/4 cup chopped dried cherries and raisins combined (he suggest cranberries only, but i use a mixture of what i have).
3. add fit/date syrup plus 1 TBSP EVOO and combine all. press into an 8x8 baking dish that has been sprayed with cooking spray and press down. bake at 350 for 16-20 minutes. cool completely and cut into 8 bars.
my family loves these! keep in mind you can use sunflower seeds, chia, flax, any dried fruit you like, or whatever. i mix it up constantly. enjoy!!!
