well all, another big day is looming upon us! This year we are trying at my home to focus on the true meaning of the holiday and less on the calorie-laden eating festival we usually have...SO on my menu for Christmas:
Baked Ham (for those who want meat)
Potato/parsnip/onion/turnip gratin (baked with evaporated skim milk and 2% cheese)
Sweet potato casserole (mashed and baked with cinnamon, ginger, nutmeg, a dash of splenda brown, and topped with oatmeal/splenda brown/dash of salt and 2 tsp butter...
veg tray and fruit tray, cheese tray,deviled eggs
roasted winter veg (parsnips, peppers, cauliflower, butternut squash)
tossed salad with dried cranberries, walnuts and crumbled goat cheese
rolls for those who want bread
some sort of non-meat protein (still debating this one...)
you CAN eat clean for the holidays. good luck!
